  • 2 egg yolks
  • 1 cup milk
  • 1 cup yogurt
  • 2 cups all purpose white flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • cup oil
  • 2 egg whites, stiffly beaten

directions

1. Preheat Waffle maker.
2. Beat egg whites in a metal bowl until stiff.
3. Put all ingredients except egg whites in a large mixer bowl.
4. Beat on low until moistened. Increase to medium, mix until smooth.
5. By hand, gently fold in beaten egg white. It is easiest to use a rubber spatula to do the folding of the egg white with the mixture.
6. Pour 1/2 cup (125 mL) batter over grids. Close waffle maker, bake until golden, 2 1/2 - 3 minutes.
7. Serve with your favorite topping.
